I peeled and sliced some of them, along with some of the cooking apples (are they Bramleys?) that Jane brought back from our friend Rosemary's; added some demerara sugar, some dried fruit (currants, raisins, apricots & dates) and a splash of Apfel Schnapps, cooked them over a low heat for half an hour or so, and this is the result...
