We usually put the tofu between sheets of paper towel and then weight it down for a bit to draw off some moisture.

In any event it looks delicious!Davidhttps://www.blogger.com/profile/14490964982321159910noreply@blogger.comtag:blogger.com,1999:blog-3840827850297141825.post-72649864133306223902015-12-21T13:28:51.009+00:002015-12-21T13:28:51.009+00:00I don't eat beef but I must say that your beef...I don't eat beef but I must say that your beef rendang looks very tempting! Nice variation. When I first made it I followed a Malaysian chef's recipe on SBS Food Safari. Since then I have made rendang with goat meat, chicken, and pork. That was also when I felt the need to grow galangal. I'm happy to say that I have a clump that is doing well. I like the salad too though I am not a big fan of tofu.Anonymoushttps://www.blogger.com/profile/09000965361716090014noreply@blogger.comtag:blogger.com,1999:blog-3840827850297141825.post-72024533005632934452015-12-21T12:06:26.430+00:002015-12-21T12:06:26.430+00:00If you can find really firm tofu (rather than the ...If you can find really firm tofu (rather than the silken type) it will withstand handling & then it's possible to drain it properly (it often comes packed in liquid) and dry it really well on a clean cloth so that it doesn't spit in the frying pan. Tofu is also quite fun to make at home from proper soya milk & then you can get the texture you need for particular dishes.Spade and Daggerhttps://www.blogger.com/profile/03447641240079673493noreply@blogger.comtag:blogger.com,1999:blog-3840827850297141825.post-58965578006112402942015-12-21T01:31:00.777+00:002015-12-21T01:31:00.777+00:00Hi Mark,

My dad served some of his national service is Malaysia but again, he only eats plain food so he didn't bring back a liking for this sort of thing. I'd love to give it a try though.Johttps://www.blogger.com/profile/17436932004631816039noreply@blogger.comtag:blogger.com,1999:blog-3840827850297141825.post-7565116807068661192015-12-20T08:13:36.633+00:002015-12-20T08:13:36.633+00:00In this type of dish the meat is not normally brow...In this type of dish the meat is not normally browned. This is confirmed by the instructions on the packet of sauce I used. Browning meat is usually done to give it more flavour, but in the case of a curry full of spices this is not necessary!Mark Willishttps://www.blogger.com/profile/04558305122821209520noreply@blogger.comtag:blogger.com,1999:blog-3840827850297141825.post-76183477770763965322015-12-20T00:17:02.151+00:002015-12-20T00:17:02.151+00:00Yum - I don't think I've ever eaten a Mala...Yum - I don't think I've ever eaten a Malaysian curry. I find it interesting that the meat isn't browned before adding it to the stew - was that your choice or is that how this type of recipe is generally done?
